2 cups corn shell pasta1/2 cup cooked black beans1 tomato, seeded and chopped1/4 cup extra virgin olive oil1/4 cup lime juice1 clove garlic, minced1/4 teaspoon Cumin1/4 cup scallions, white part only, chopped

Instructions: |
Cook pasta according to package directions. Drain, rinse and cool.
Add beans and tomato to pasta. Mix dressing ingredients in a blender. Pour over pasta and mix well. Serve room temperature. |
